I was lucky enough to try some new tailgating recipes today prior to the PSU and Maryland games in our neck of the woods. Super easy and not very time consuming.
1) Red Peppers stuffed with hot Italian sausage meat and meat balls, Ragu and tomato paste blend with some red onion, asiago or fontina cheese mixed with white sticky rice. Served in a red cup after completion for easy eating with a spoon or fork. Easy to manipulate with extra ingredients.
2) Pork Belly burnt ends cubed and stuffed into giant jalapenos with pepper jack and cheddar cheese. Add crumbles to the outside as needed. Easy to serve with large toothpicks.
3) Charred sweet corn added to guacamole and Pico de Gallo with some chopped red onion and Tostitos. Add cilantro, cotija cheese and lime for taste. Throw it in a tortilla with meat (Carne Asada) for anyone that wants a street taco.
4) Crab Cakes. Enough said!
