OT---Outdoor Griddles--What to cook?

Gents, thought I would throw this out there as I just added a griddle plate to replace two of the racks in my grill. Wondering what sort of things all of the grill masters on this site cook on a griddle aside from the obvious Shrimp/Scallops etc?
