On monday I am being paid to do a private.....well not brunch but a "brunchish" meal that doesn't have breakfast food....12 adults at 1pm at a private residence....
The ask is Southern style and I think they want a little New Orleans.....
I have to to five dishes and this is not my wheelhouse.....so I got 3 plus an extra....need 2 more....
-Chicken and dumplings
-Shrimp and grits
-A crawfish paella (not technically a southern dish but will make it seem like a dry boil)
-Oysters with multiple sauces (this is my plus as I can do it easy and with my budget know I can add it)
So what else should I make? Already ordered what I need for the above and still have half my budget....so dont have to go cheep
