Can anyone explain ovetimte field goals

Just watched WMU kick and miss a FG in 3rd overtime. All they had to do was make the FG to win the game. Why run the ball on third down? . Why don't teams in this situation kick a FG on third down and, if they miss, kick another one? Take two cracks at it, or even three.
